Oreo Cheesecake Cupcakes

OMG! These were soooooooooooo good. And really simple to make. This recipe makes 10 cupcakes.

Preheat your oven to 135 C. Put paper liners in each muffin tin and then place one whole Oreo in the bottom of each lined cup.

Beat eight ounces of cream cheese, 1/4 cup of sugar, and 1/4 teaspoon vanilla extract in a mixing bowl.

Then add one large egg and 1/4 cup of sour cream to the mixture and beat together.

Stir in three chopped Oreos by hand (I put them in the food processor first). Pour the batter into the prepared tins, filling each almost to the top.

Bake for 15 minutes, then cool for 15 minutes before transfering them to the refrigerator for at least four hours. (Although I couldn’t resist and ate one after about half an hour… Yummy!)

My recipe was slightly modified from this one, which I found on Pinterest of course! 🙂
